The kernels inside these coffee cherries, the coffee beans, are colorless when untreated. After treatment, the coffee beans are dyed with a turquoise color, and then they are roasted and ground to become the fragrant cup of coffee in our hands. During the roasting process, many chemical reactions occur inside the coffee beans, one of which is the formation of volatile gases such as carbon dioxide. After roasting, the carbon dioxide begins to escape from the coffee beans, a process that usually takes several weeks to complete.
